If you know me you know that I hate being hot because I sweat like a stuck hog. However, I love food (as you can tell). I look forward to every summer when I can enjoy grilling outside and not worry about getting rained on. I make my own rub and BBQ sauce now (and no I’m not sharing the recipe, I’ve been working on them both for years now) and recently I started cooking baby back pork ribs from Costco. If you want a rib that is full of meat get it from Costco, they are the best by far. Basically what I do is put the rub generously all over the ribs on both sides, because “I hate one sided tasting food!” (Food TV Emril quote) :) I then let them sit overnight, although I’ve put rub on the ribs just an hour or so before I started cooking them and they were good just not as flavorful. I then take them out the next day and place them in the oven at 275 degrees for 3 to 3 1/2 hours (note: the longer the better). After that I place them on the grill (high heat) and baste them with my BBQ sauce flipping them every few minutes basting both sides. Today we celebrated the 4th and ate some ribs with Brett and Kim Nordquist and their family. I’m not bragging or anything (ok just a little), they said the ribs were really good. I can’t tell you how much enjoyment I get out of cooking my ribs for others, especially when they love it. Cooking is one of my passions and I just love it!

My next adventure will take me to a charcoal grill where I will use wood chips and cook the ribs with smoke to add that extra flavor. I think once I figure that out I will have a rib that tastes as good as the ones in the Memphis in May Barbeque Cooking Contest. :) Maybe then I’ll go online and buy one of these grills! :)
